Clase Azul spirits are made from blue agave, hence the name. Grown in the mineral-rich mountains of Jalisco, blue agave plants are harvested and the leaves are removed. At the core of the plant are piña’s that are slow-cooked in brick ovens. Next, they are milled to extract sweet juice that merges during the cooking process. The juices are fermented in patented yeast imparts to create a unique flavor profile. The elixir is distilled in copper stills. While you can already see the craft that sets Clase Azul tequila apart, perhaps the real differentiator is time. Select Clase Azul tequila’s are matured in various types of oak barrels for months to years to elevate the taste.
