Description
Parmigiano Reggiano PDO is the "king of cheeses". Its origins date back to the Middle Ages, a thousand years ago, when in Emilia Romagna the Benedictine and Cistercian monks started to produce a cheese that was nutritious and suitable for long preservation, using only local cow’s milk and salt. Parmigiano Reggiano is a hard cheese made with cow’s milk and characterised by a low content of water. It is produced exclusively in the provinces of Parma, Reggio Emilia, Modena, Bologna to the left of the Reno river, and Mantua to the right of the Po river. According to the DOP legislation, the cattle have to be bred exclusively in this area using only local forage. Montanari&Gruzza has been producing Parmigiano Reggiano DOP since 1950 in Reggio Emilia, in the heart of the homeland of the “king of cheeses”. An integrated chain that starts from the collection of milk from carefully selected farms to the production process, based on the unique knowledge of expert master cheesemakers. Parmigiano reggiano PDO is an incredibly versatile products that can be added to an array of different dishes. It is perfect grated over pasta recipes, shaved on salads, added to cheese boards and vegetable soups.
