1Prep the ingredients: Thinly slice the pepper & roughly chop the parsley (optional).
2Get the pasta on: Cook the pasta as per pack instructions, keeping back 1/4 cup of pasta water for later.
3Fry the meatballs: Heat a little oil in a pan over a medium heat, then add the meatballs and fry for 6-8 mins, or until they're brown on all sides.
4Make the sauce: Next, add the pepper and fry for 2 mins, before sprinkling over the Cajun Seasoning and cooking for 1 more minute.
5Stir in the chopped tomatoes, the Chicken Stock and the Hot Pepper Sauce, then cook over a medium heat for 8-10 mins.
6When the pasta is done, add the cooked pasta along with the reserved pasta water to the sauce and stir well.
7Serve the pasta in bowls, sprinkled with grated cheese and chopped parsley (if having).
