CHICKEN SOUVLAKI
Souvlaki is my go to when I'm craving something that tastes incredible whilst being nutritious and high in protein. Ditch the takeaway and make it yourself!
INGREDIENTS
Serves 4
Chicken
• 600g Chicken Thigh
• Salt & Pepper
• 2 Tbsp Olive Oil
• 1 Tbsp Garlic Powder
• 2 tsp Dried Oregano
• 1 tsp Dried Thyme
• 1 tsp Dried Rosemary
• Juice of 1/2 Lemon
350g Tzatziki or make your own:
• 300g Greek Yogurt (or 200g Greek Yoghurt + 100g Mayo)
• 1/2 Cucumber
• 2 Cloves of Garlic, minced
• Juice of 1/2 lemon + more to taste
• 2 Tbsp Fresh Dill finely chopped
• 2 Tbsp Olive Oil
• Salt and cracked Black Pepper, to taste
Honey mustard
• 4 Tbsp Mayo
• 1/2 tsp Wholegrain Mustard
• 1/2 tsp Dijon Mustard
• 1 tsp Yellow Mustard sauce
• 2-3 tsp Honey (sweetness to taste)
4 Greek pitta or make you own
• 160ml Whole Milk, at room temperature
• 40ml Water
• 1 tsp Sugar
• 2 tbsp Olive Oil
• 1.5 tsp Yeast
• 120g Flour
• 1 tsp fine Sea Salt
• 1 tsp Thyme leaves, finely chopped
• 1 tbsp Olive Oil, for frying
Simple salad
• 2 Medium Tomatoes, sliced
• 1 Large Red Onion, sliced
• 2 Little Gem Lettuce, shredded
• 1 Tbsp Olive Oil
• Juice of ½ Lemon

Marinade chicken with listed ingredients and set aside in fridge

Grill the chicken thighs on a hot cast iron pan till cooked through (around 8 minutes). Let rest for 5-10 minutes then chop into smaller pieces and fry with a bit of oil in a hot cast iron pan.

To make the honey mustard mix mayonnaise, mustards and honey to make the honey mustard sauce.

** Optional to make your own Pitas: Combine all ingredients for the pitta into a dough and knead for 8-10 minutes. Cover and let rise for 1 hour. After an hour, punch down large air bubbles and divide into roughly six 100g dough balls. Let rest for 15-20 minutes covered by a tea towel. Roll out the dough and cook on a hot, preferably cast iron, pan that’s lightly oiled with olive oil for 1 minute per side. Steam pittas in tea towel.

** Optional to make your own Tzatziki: Grate the cucumber and squeeze out excess water with a towel, then mix with yoghurt and rest of ingredients.

Assemble the souvlaki with the tzatziki, salad, grilled chicken, and top with the honey mustard.
