Meatball Bake With Garlic Bread Topping.

Ingredients
12 Beef Meatballs2 Tsp Smoked Paprika2 Tsp Dried Oregano400g Tin Chopped Tomatoes
100g Spinach1 x Garlic Baguette120g Grated CheddarSwap the beef meatballs for your favourite vegetarian or vegan meatballs. You can also swap the meatballs for vegetarian mince, or bite-sized pieces of aubergine.

Preheat the oven to 200°C/180°C fan. Take the garlic bread out of the freezer, if it's frozen.

Cook the meatballs: Heat a dash of your preferred oil in a large ovenproof frying pan over a medium heat. Add the meatballs and fry for 5-7 minutes until browned.

Add the paprika and dried oregano, stir to combine and fry for a minute.

Add the chopped tomatoes, season with salt and pepper. Add the spinach and a couple of tablespoons of water, mix well and let it simmer for 2 minutes.

Assemble the bake: Slice the garlic baguette. Grate the cheddar. Scatter some of the cheddar on top of the meatballs. Place the garlic bread on top of the meatballs, sprinkle the rest of the cheddar on top. (you might need to cut some of the garlic bread to fit the pan).

Place in the oven and bake for 10 - 12 minutes, until the garlic bread is golden brown and the cheese is bubbling. Then serve it up and enjoy.
