One Tray Pizza Chicken.
The ultimate easy dinner, where pizza night meets chicken night! This one-tray wonder layers juicy chicken breasts over a herby tomato base with potatoes, sweetcorn, and red onion. Topped with pepperoni, bubbling mozzarella, and a sprinkle of oregano, it’s everything you love about pizza, with none of the faff. Minimal prep, maximum flavour, and only one tray to wash up. Finished with fragrant basil for a fresh lift.

Ingredients
540g Tinned Potatoes, drained1 Red Onion, wedges198g Tin Sweetcorn, drained500g Tomato Passata½ Tbsp Dried Oregano
4 Chicken Breasts125g Fresh Mozzarella, drained & torn60g PepperoniHandful fresh basil, leaves picked to garnishEasily adaptable, you can change this dish depending on your dietary needs. Swap chicken for thick slices or chunks of halloumi. Meaty portobello or chestnut mushrooms make a great vegetarian swap. Marinate cubes of extra-firm tofu or tempeh in olive oil, garlic, oregano and a bit of soy sauce before layering on top instead of the chicken.

Preheat the oven to 220°C/200°C fan.

Slice the potatoes in half. If you don't have tinned potatoes, then simply boil your potatoes in salted water until tender, around 10 minutes, then slice and use the same way as you would the tinned potatoes. You can also use a pack of pre-cooked potatoes. Cut the red onion into wedges.

Assemble the traybake: Add the potatoes, red onion and drained sweetcorn to a large baking dish and toss together with the passata and half the dried oregano. Season well with salt and pepper.

If the chicken breasts are quite thick, you can place them between 2 sheets of greaseproof paper and lightly flatten them, to ensure even cooking. Layer the chicken breasts on top of the vegetables, then scatter over the pepperoni. Tear the mozzarella into strips then scatter it on top with the rest of the dried oregano. Drizzle the top of the chicken with a dash of your preferred oil.

Bake in the oven for 20 - 25 minutes, until the chicken is cooked through and the cheese has melted.

Scatter the basil leaves on top then plate up and enjoy!
