THAI INSPIRED BASIL BEEF STIR FRY
This flavour packed meal comes together in less time than it takes to cook your rice and it’s a real crowd pleaser. Try it once and I can guarantee it will quickly be added to your weeknight dinner rotation.
INGREDIENTS
Serves 4
• 500g Beef Mince
• 30g Basil
• 170g Green Beans
• 3 Cloves Garlic
• 2 Shallots
• 2 Tbsp Chopped Chillies
• 3 Tbsp Dark Soy Sauce
• 2 Tbsp Oyster Sauce
• 1/4 Cup Rice
• 4 Eggs
• Salt
• Sugar
• Neutral Oil (Rapeseed, Sunflower, Vegetable)

Cook your rice according to package instructions.

Prepare all your vegetables. Start by finely chop your garlic and shallots. Then, cut your green beans into 1 inch pieces and pick all your basil leaves from the stems.

Create your sauce mixture by combining 3 Tbsp of dark soy sauce, 2 Tbsp of oyster sauce, and 2 tsp of sugar in a bowl.

Preheat a large frying pan to medium/medium-high heat. Once hot, pour in 2 Tbsp of neutral oil and throw in your chopped garlic, shallots and 2 tablespoons of your chopped chillies (or your preferred amount). Allow to cook for 5 minutes.

Place your ground mince in the pan and use a spoon to break it into smaller chunks. This will allow it to cook quicker as well as develop better browning throughout. Turn the heat up to high and cook for 7-9 minutes, mixing regularly to ensure no burning.

When your mince is nicely browned and no pink bits remain, add in your green beans and continue to cook on high. Cook for another 3 minutes until the green beans have softened up. Before turning the heat down, mix in your sauce and stir well until combined with the mince and beans.

With the sauce added, drop the temperature down to low and add in your basil leaves. These will wilt and disappear quickly so it’s ideal to add them when you’re a few minutes away from serving.

Fry your eggs how you like them. I personally prefer a crispier bottom with an unset yolk. To achieve this you will want to cook it in a good amount of high smoke point oil (rapeseed oil) and in a heavy bottom pan. Make sure the heat is on high and be careful of any oil splatter.

Serve each plate with a healthy portion of cooked rice, a few scoops of your Thai basil beef mixture, and top with your fried egg. Enjoy!
