BEANS & BAKED FETA
Saucy lil number of tomatoey beans with baked feta, this is such a simple summer staple that I go back to time and time again. Soak up that sauce with some fresh bread, simply sensational scenes
INGREDIENTS
Serves 2
• 400g Tomatoes, halved
• 3 Garlic Cloves, left whole
• 1 tsp Chilli Flakes
• 1 tsp Oregano
• 4 Tbsp Olive oil
• 1 Tin Cannelloni Beans
• 1 Small glass White Wine
• 1 Block Feta, halved
• 2 Tbsp Parsley, finely chopped
• Fresh bread to serve
STEPS

Heat the oven to 180 fan.

Add your tomatoes, garlic, chilli, oregano and olive oil to a roasting pan and roast for 15 mins.

Take out and add the beans and wine and mix well, then put the feta on top and bake for another 15 mins until the cheese starts to go golden.

Serve with the parsley sprinkled on top, more olive oil.
