PEA & SPINACH GNOCCHI
This one will win the award for most vibrant dinner you cook this week, only a few ingredients but so so delish.
INGREDIENTS
Serves 4
• 3 Shallots, finely chopped
• 2 Garlic cloves, finely chopped
• 250g Baby Spinach
• 200g Peas
• ½ Lemon Juice
• 200ml Double Cream
• 500g Gnocchi
• 2 Balls Mozzarella

Heat the grill to high. Then heat a glug of olive oil in a frying pan, add your shallots and garlic and gently cook for 5 mins.

Add your spinach and wilt down then add your peas and cream, cook for a few mins then transfer to blender and blend until smooth, add the lemon juice and adjust the seasoning

Transfer the sauce back to the frying pan, add in the gnocchi and tear in 1 of the mozzarella balls, stir well then pour into an oven proof dish and top with slices of the remaining mozzarella.

Bake for about 7 mins until the top is bubbling and mozzarella is melted and golden, then serve!
