umami flavour. Intense flavours of onions and herbs, which can
get better with age, balanced by butter and cream.
Made with added cream, creating an intensely rich, decadent
and toothsome texture.
BÜTSCHWIL KAASE dairy is located in the Lower Toggenburg
region, Reto has taken over from his father in the last few years
working to modernize the dairy and has added new maturatuion
rooms and working on new cheeses and also resurecting some
older classics such as Ementailer.
