1Bring a small pot of water to the boil, carefully lower your room-temp medium egg and set a timer for 6.5 minutes.
2Finely chop the gherkin, shallot, dill, and capers and mix together with the cream cheese, olive oil, lemon juice, salt and pepper.
3Place your bread slices in the toaster.
4By now, your timer should have gone off. Fish the egg out of the pot and place it in a bowl under cold running water.
5Once the toast is done, spread it with the cream cheese mixture and top with the smoked fish ribbons. Crack and peel your egg, cut it into quarters and place on top of the ribbons. Finish it all off with another squeeze of lemon juice, salt, pepper and dill.
