LUXURIOUS BRUNCH TOAST
A quick, yet impressive and luxurious breakfast to celebrate the new year with vibrant smoky and punchy flavours.
INGREDIENTS
Serves 2
• 1 Egg
• 2 Slices of Bread
• 2.5 Heaped tbsp Cream Cheese
• 1 Medium Gherkin
• 1/4 Shallot
• 1 Tbsp Dill, plus more to serve
• 1 Tbsp Capers
• 1 tsp Extra Virgin Olive Oil
• 2 Squeezes of Lemon, plus more to serve
• 6 Slices Smoked Salmon/Trout
• Salt & Pepper to serve
STEPS

Bring a small pot of water to the boil, carefully lower your room-temp medium egg and set a timer for 6.5 minutes.

Finely chop the gherkin, shallot, dill, and capers and mix together with the cream cheese, olive oil, lemon juice, salt and pepper.

Place your bread slices in the toaster.

By now, your timer should have gone off. Fish the egg out of the pot and place it in a bowl under cold running water.

Once the toast is done, spread it with the cream cheese mixture and top with the smoked fish ribbons. Crack and peel your egg, cut it into quarters and place on top of the ribbons.

Finish it all off with another squeeze of lemon juice, salt, pepper and dill.
