Ingredients
2 cups cooked white rice (cold, preferably day-old)1 tablespoon oil (vegetable or sesame)1 cup asparagus, trimmed and cut into 1-inch pieces1 cup fresh pineapple, diced2 cloves garlic, minced
2–3 tablespoons soy sauce2 eggs, lightly beaten (optional)Salt and pepper to tasteOptional toppings: chopped scallions, sesame seeds, chili crisp

Prep the rice: If you haven't already, cook rice and let it cool completely (leftover rice works best for texture).

Sauté the asparagus: In a large skillet or wok, heat oil over medium-high. Add asparagus and cook for 3–4 minutes until just tender.

Add pineapple and garlic: Stir in the pineapple and garlic. Cook for another 2–3 minutes, letting the pineapple lightly caramelize.

Scramble the eggs (if using): Push everything to the side of the pan and pour eggs into the empty space. Scramble until just set, then mix with the veggies.

Add rice and sauce: Add rice and drizzle in soy sauce. Stir everything together and cook for 3–5 more minutes, until hot and slightly crisped on the bottom.

Finish and serve: Taste and adjust seasoning. Top with scallions, sesame seeds, or chili crisp if desired. Serve warm.
