Austin Hope strives to make wine that reflects all that Paso has to offer and to inspire people to be just as excited about the region as he is. Paso Robles Defined. The classic ruby color of the Austin Hope Cabernet is stunning and sets the stage for this robust Cabernet Sauvignon. On the nose, aromas of tobacco, dark chocolate shavings, fresh black currant hints of savory notes. On the palate, layers of vanilla, coco powder, juicy cherry, baking spices and signature tobacco create a full body wine that is balanced by a splash of fresh acid and round, refined tannins. Paso Robles is one of California's most pastoral domains. Its name roughly translates to passageway of oaks, and indeed majestic trees mark the landscape. The goal for this Cabernet is simple - to make wine that expresses all that Paso has to offer, with its pastoral beauty, perfect soils, maritime climate and limitless possibility. - Austin Hope, Owner/Winemaker. Winegrape's sourced for Austin Hope Cabernet are grown by family farmers in Paso Robles and are 100% Sustainably farmed and SIP Certified. Vineyards selected are located in eight of the eleven Paso Robles sub-districts. Each vineyard block is carefully selected based on soil type and farmed to Austin's specification.
This is a very powerful and yet spicy and nuanced bottling. Lush aromas of black cherry, caramel, coffee, cream and baked licorice show on the nose, while the viscous palate is packed with black-cherry cordial, licorice and mocha cream flavors. Firm tannins give balance to the brown sugar kick of the finish.
Quite dark in the glass, this reliable crowd-pleaser begins with hearty aromas of black currant, black plum, lush oak and caramel, accented by a hint of olive and loads of clove and nutmeg. The mouthfeel is hearty and rich, with just enough tannic weight to balance the creamy black-cherry, caramel and chocolate-ice-cream flavors, which lead to an oaky finish.
