Ingredients
1 cup orzo pasta2–3 chicken sausages, sliced1 tablespoon olive oil1 clove garlic, minced1 cup chicken broth or water
1/4 cup cream or half-and-half2 cups baby spinachSalt and pepper to tasteOptional: grated Parmesan for serving
Instructions

Brown the sausage: Heat olive oil in a skillet over medium heat. Add sliced sausage and cook until browned on both sides, about 4–5 minutes. Remove from pan and set aside.

Toast the orzo: In the same skillet, add garlic and orzo. Cook for 1–2 minutes, stirring frequently, until lightly golden and fragrant.

Simmer: Add broth and bring to a simmer. Cook, stirring occasionally, until orzo is tender and most of the liquid is absorbed, about 8–10 minutes.

Add cream and spinach: Stir in cream and spinach. Cook until spinach wilts and everything is heated through. Return sausage to the pan and toss to combine.

Finish and serve: Season with salt and pepper. Serve warm, with Parmesan if desired.
