1 Cup Dry White Wine2 Tbsp Tomato PasteParmesan Cheese2 Tbsp Olive OilSalt and Freshly Ground Black Pepper
1Finely dice the onion, celery, and carrots. Halve your tomatoes.
2Heat the olive oil in a large pot over medium heat. Add the finely chopped onion, celery, and carrots. Sauté for about 5-7 minutes, until soft and fragrant.
3Increase the heat to medium-high and add the ground beef. Cook the meat until browned, breaking it up. Season with salt and pepper.
4Pour in the white wine and let it simmer for a few minutes until the alcohol evaporates and the liquid reduces by about half.
5Stir in the halved fresh tomatoes and tomato paste. Reduce the heat to low and simmer the sauce uncovered for 1-2 hours. Stir occasionally to prevent it from sticking, and add a bit of water if needed to maintain the right consistency. Remove any tomato skins as needed.
6Taste and adjust the seasoning with salt and pepper.
7Cook your pasta according to the package instructions.
8Add to the bolognese, along with a splash of pasta water.
9Serve your pasta with freshly grated parmesan and enjoy!
